Strawberry Jelly Trifle

Ingredients

For the jelly layer

  • 1 pack Foster Clark’s strawberry jelly (vegetarian)
  • Fresh fruits (strawberries, blueberries, or any available fruit)

For the cake layer

  • 1 pack Foster Clark’s white cake mix
  • 230 ml water
  • 3 egg whites
  • 80 ml oil

For the custard layer

  • 1½ cups milk
  • 1½ Tbsp Foster Clark’s custard powder
  • 1 Tbsp sugar

For the cream layer:

  • 1 pack Foster Clark’s whipped topping mix
  • 115 ml cold milk

For garnish

  • Fresh strawberries

Instructions

Prepare the jelly

  1. In a saucepan, mix the jelly powder with hot water and stir until completely dissolved.
  2. Divide the fresh fruits among serving glasses, then pour the jelly mixture over them.
  3. Let it cool slightly at room temperature, then refrigerate for about 1 hour until set.

Prepare the custard

  1. In a saucepan, whisk together the milk, custard powder, and sugar until smooth.
  2. Place over medium heat, stirring continuously until the mixture thickens and becomes creamy.
  3. Pour into a bowl, cover with cling film touching the surface to prevent a skin from forming, and let cool to room temperature.
  4. Once cooled, whisk with a hand or electric mixer until smooth and creamy.

Prepare the cake

  1. In a mixing bowl, combine the cake mix with water, oil, and egg whites as per the package instructions.
  2. Pour the batter into a greased baking pan.
  3. Bake in a preheated oven at 180°C for 30 minutes or until cooked through.
  4. Allow to cool, then crumble part of the cake (discarding the edges) for layering.

Prepare the cream

  1. Whip the whipping cream with cold milk using an electric mixer until firm and fluffy.

Assemble the trifles

  1. Place a layer of crumbled cake over the set jelly.
  2. Spoon a layer of creamy custard on top.
  3. Add a generous layer of whipped cream and garnish with fresh strawberries.
  4. Chill until serving time and serve cold.
