Luqaimat with Date Molasses & Sesame

Crispy on the outside, soft and fluffy on the inside… Gulf-style luqaimat drizzled with rich date molasses and finished with toasted sesame. A classic Arabic dessert perfect for Ramadan gatherings and post-Iftar nights.

Makes

6 portions

Ingredients

  • 1 pack Foster Clark’s dumpling mix (luqaimat) with yeast
  • 2 Tbsp Foster Clark’s custard powder
  • 500 ml warm water
  • Oil for frying

For Serving

  • Date molasses
  • Toasted sesame seeds

Instructions

  1. In a bowl, combine the luqaimat mix, yeast, and custard powder.
  2. Gradually add the warm water while stirring with a wooden spoon until you get a sticky dough.
  3. Cover and let the dough rest for 45 minutes in a warm place.
  4. After resting, whisk the dough a few times using a balloon whisk to release any trapped air.
  5. Heat the oil over medium heat.
  6. Dip a measuring spoon (½ Tbsp) into cold oil, scoop out the dough, and gently drop into the hot oil to form even-size balls.
  7. Fry while turning continuously until golden and crispy.
  8. Serve immediately with date molasses and a sprinkle of toasted sesame.

Foster Clark’s Tip

Coating the spoon with cold oil and whisking the dough after resting gives you perfectly round and extra crispy luqaimat.
