Banana Caramel Parfait
A chilled dessert that combines soft cake layers with rich caramel flavour and the freshness of ripe bananas. It’s a simple and delicious recipe that offers a luxurious parfait experience.

Ingredients
- 1 pack Foster Clark’s Vanilla Cake Mix
- 3 eggs
- 275ml water
- 80ml vegetable oil
- ½ tsp Foster Clark’s banana Essence
- 2 cups milk
- 3 Tbsp Foster Clark’s Custard Powder
- 2 Tbsp sugar
- 1 pack Foster Clark’s Whipped Topping Mix
- ½ cup cold milk
- Caramel sauce
- Fresh banana slices for garnish
Instructions
- In a large bowl, combine the cake mix with the eggs, water, and oil.
- Beat using an electric mixer on medium speed until the batter is well combined.
- Pour the batter into a greased or parchment-lined baking pan and bake in a preheated oven at 180°C for about 40 minutes or until a toothpick inserted into the centre comes out clean.
- Let the cake cool completely, then cut it into small cubes.
- To prepare the custard layer, whisk together the custard powder, sugar, and milk in a saucepan over medium heat, stirring continuously until the mixture thickens and becomes smooth.
- Remove the custard from the heat, then stir in half a teaspoon of banana essence until well combined. Let it cool slightly.
- In another bowl, whip the whipping cream powder with ½ cup of cold milk until thick and creamy.
- In serving moulds or dessert glasses, layer cake cubes at the bottom, followed by a layer of banana-flavoured custard, then slices of banana with a drizzle of caramel sauce.
- Repeat the layers depending on the size of the cup or glass.
- Finish by topping with more whipped cream, banana slices, and additional caramel sauce as desired.
Foster Clark’s Tip:
You can include a thin layer of crunchy nuts between the layers for added texture.
