Delightfully soft and buttery, these Jam-Filled Custard Cookies combine a creamy custard base with a sweet jam centre, a classic treat that melts in your mouth and brightens any tea break.
Ingredients
50g ghee
30g powdered sugar
100g all purpose flour
½ tsp baking powder from Foster Clark’s
2 Tbsp custard powder from Foster Clark’s
1 Tbsp corn flour from Foster Clark’s
1 tsp vanilla essence from Foster Clark’s
½ cup milk
½ cup jam
Instructions
In a large bowl, mix ghee and sugar until it’s light and fluffy.
Add flour, custard powder, cornflour, baking powder, and mix well.
Add milk & vanilla essence, mix until it forms a dough.
Roll out flat, cut the cookies in the desired shapes and bake at 160°C for 10-15 mins.
Once done, fill the cookies with jam and sprinkle some powdered sugar.
