Lemon Madeleines

These lemon madeleines are light, buttery French cakes with a bright citrus twist. Easy to make and perfect for tea-time or dessert, this classic recipe delivers golden, fluffy madeleines every time.

Ingredients

  • 110g all-purpose flour
  • ½ cup sugar
  • ½ tsp baking powder from Foster Clark’s
  • 2 eggs
  • ½ tsp vanilla essence from Foster Clark’s
  • ½ tsp lemon essence from Foster Clark’s
  • 100g melted butter, slightly cooled
  • For topping:
  • Powdered sugar
  • Lemon zest

Instructions

  1. In a bowl, mix well the flour, sugar, and baking powder.
  2. In another bowl, whisk the eggs with the vanilla and lemon essence until combined.
  3. Add the egg mixture to the dry ingredients and mix well until you get a smooth batter.
  4. Add the melted butter and stir until fully incorporated.
  5. Pour the batter into buttered madeleine moulds, then chill in the fridge for 1 hour.
  6. Bake in a preheated oven at 200°C for 4 minutes, then reduce the temperature to 190°C and bake for an additional 8 minutes, until cooked through and lightly golden.
  7. Remove the madeleines from the oven and let them cool slightly, then serve.

For Serving:

Dust the madeleines with powdered sugar and garnish with fresh lemon zest as desired.
