Mini Kunafa Cheesecake Cups

A luxurious Ramadan dessert that combines crispy kunafa with smooth raspberry cheesecake, presented in elegant mini cups perfect for after-iftar gatherings and special Ramadan hosting. A chilled, easy, and refreshing layered dessert that adds a beautiful touch to your table.

Ingredients

For the Filling

  • 100 g cream cheese
  • ½ Tbsp powdered sugar
  • 1 packet Foster Clark’s raspberry jelly (beef)
  • 1 packet Foster Clark’s whipped topping mix
  • 100 ml cold milk
  • 30 ml boiling water

For the Topping

  • 1 cup ready-made raspberry juice
  • 1 Tbsp Foster Clark’s Cornstarch
  • Sugar to taste (optional)

For Decoration

  • 1 packet Foster Clark’s whipped topping mix
  • 115 ml cold milk

For the Base

  • 250 g finely shredded kunafa
  • 1 Tbsp butter + 1 Tbsp oil for toasting

Instructions

Prepare the Base

  1. Toast the kunafa with butter and oil over medium heat, stirring constantly until golden and crisp.
  2. Divide into serving cups and let it cool completely.

Prepare the Raspberry Cheesecake Filling

  1. Dissolve the raspberry jelly in boiling water and let it cool slightly without setting.
  2. Beat cream cheese with powdered sugar until smooth.
  3. Add the dissolved jelly and mix well.
  4. In another bowl, whip the cream powder with cold milk until firm.
  5. Fold the whipped cream into the jelly mixture until fully combined and smooth.
  6. Pour over the cooled kunafa layer.
  7. Refrigerate for 2 hours.

Prepare the Raspberry Sauce

  1. Mix the cornstarch with the raspberry juice while cold.
  2. Place over heat, stirring continuously until the mixture thickens.
  3. Cover the surface with cling film for 10 minutes so it cools without forming a skin.
  4. Pour over the cheesecake layer.

Decorate

  1. Whip the whipping cream with cold milk until fluffy.
  2. Decorate the cups and add fresh raspberries if desired.
