Vanilla & Chocolate Sandwich Cake

An easy and fun recipe, perfect for breakfast or as a sweet treat in the lunch box. It combines rich chocolate cake with soft vanilla layers and a fruity jam filling in the middle.

Ingredients

  • 1 pack chocolate swirl cake mix from Foster Clark’s (includes vanilla and cocoa mix)
  • 3 eggs
  • 80ml oil
  • 275ml water
  • Jam for filling

For decoration

  • White chocolate
  • Breakfast cereal

Instructions

  1. In a large bowl, mix the cake mix with eggs, oil, and water until smooth.
  2. Divide the batter into two portions: leave one as vanilla and add the cocoa mix to the other, stirring well.
  3. Preheat the over at 180°C. Bake each portion separately in a greased 9-inch pan.
  4. Once baked, allow the cakes to cool completely on a wire rack.
  5. Using a round cutter, cut the cakes into small circles.
  6. Spread a layer of jam on a chocolate cake circle, then top with a vanilla cake circle to form a sandwich.
  7. Secure each sandwich with small wooden or plastic sticks, then decorate the tops with drizzles of melted white chocolate and a sprinkle of cereal.

You can also cut the cakes into rectangular shapes and serve them as sweet sandwich bars for kids.
