5-Ingredient Chilled Lemon Mousse

If you’re looking for a refreshing no-bake dessert that’s easy to prepare, this lemon mousse made with Foster Clark’s whipping cream is the perfect choice. Its creamy texture and zesty lemon flavour make it an ideal treat for all occasions.

Ingredients

  • 1 pack whipped topping mix from Foster Clark’s
  • 100ml cold milk
  • 1 pack lemon jelly (beef) from Foster Clark’s
  • 30ml boiling water
  • 2 Tbsps Mascarpone cheese

Instructions

  1. In a small cup, dissolve half a pack of Foster Clark’s lemon jelly in boiling water. Set aside to cool slightly.
  2. In a mixing bowl, beat the Mascarpone cheese until smooth.
  3. Add the cold milk and Foster Clark’s whipping cream powder to the cheese, and whisk for 3 minutes until thick and creamy.
  4. Reserve a quarter of the whipped cream mixture for topping later.
  5. Gently mix the dissolved lemon jelly into the remaining cream until fully combined.
  6. Pour the lemon mousse into serving cups and refrigerate for at least 4 hours until set.
  7. Top with the reserved cream and garnish with lemon slices before serving.

Foster Clark’s Tip:

For a more vibrant lemon-yellow colour, you can add a few drops of Foster Clark’s yellow food colouring to the mousse mixture before pouring it into the cups.
