Mango Trifle

Mango Trifle is a refreshing dessert that brings together soft cake cubes, smooth custard, and airy whipped cream. Perfect for warm days or festive occasions.

Ingredients

  • 1 pack yellow cake mix from Foster Clark’s
  • 3 eggs
  • 275ml water
  • 80ml vegetable oil
  • 2 cups milk
  • 2 Tbsp sugar
  • 3 Tbsp custard powder from Foster Clark’s
  • ½ tsp mango culinary essence from Foster Clark’s
  • 1 whipped topping mix from Foster Clark’s
  • ½ cup cold milk
  • ½ cup fresh mango juice
  • ½ Tbsp corn flour from Foster Clark’s
  • Fresh mango, diced

Instructions

  1. In a large bowl, combine the cake mix, eggs, oil, and water.
  2. Beat using an electric mixer on medium-high speed until well combined.
  3. Pour into a baking pan and bake in a preheated oven at 180°C until a toothpick inserted comes out clean.
  4. Remove from the oven and let it cool completely.
  5. Cut the cake into small cubes.
  6. In a saucepan, whisk together milk, sugar, and custard powder.
  7. Place over medium heat, stirring constantly until the custard thickens then remove from heat.
  8. Add mango essence to the custard and let it cool slightly for few minutes.
  9. In a separate bowl, beat the whipped topping mix with cold milk until thick and fluffy.
  10. In a saucepan, whisk together mango juice and corn flour until well combined.
  11. Place over medium heat, stirring continuously, until the mixture thickens into a light sauce consistency.
  12. Remove from heat and set aside to cool.
  13. Assemble the Trifle:
    • Place a layer of cake at the bottom of serving glasses or a trifle dish.
    • Moisten the cake with a little mango juice.
    • Spoon a layer of custard over the cake and let it cool slightly.
    • Add diced mango pieces on top of the custard, then top with whipped cream.
    • Garnish with mango sauce and additional mango pieces.
  14. Serve chilled.
